Medium chain triglycerides are only composed of saturated fatty acids, with low freezing point, liquid at room temperature and low viscosity. Compared with soybean oil, it is completely odorless and colorless transparent liquid. Compared with ordinary oils and hydrogenated oils, the content of medium chain triglyceride unsaturated fatty acids is extremely low, the oxidation stability is very good, and the iodine value is not more than 0.5. MCT is particularly stable at high and low temperatures.In the food additive industry, medium chain triglycerides can be used as solvents and carriers for edible essence and pigments; In the processing of baked food, medium chain triglycerides are often used together with cheap vegetable oil as an anti stick agent to prevent baked food from sticking to the pot or mold; Pure medium chain triglycerides or mixed oils with vegetable oils are also commonly used as lubricant and release agent for sausage molding; Medium chain triglycerides can also be used to treat various fat soluble vitamins, pigments and antioxidants. When a small amount of medium chain triglycerides is added, the viscosity of high viscosity fatty substances will be greatly reduced; In the food processing industry, medium chain triglycerides are also used to replace the easily oxidized milk fat to make milk liqueur and cheese imitations; If used in combination with water-soluble colloid, medium chain triglycerides can also be used as a beverage turbidity agent.
